Today I was reading Men's Health Magazine at the beach and found this super-healthy and tasty quinoa recipe I just had to try. It turned out great, so I wanted to share it with you. Give it a try and let me know how you liked it! 
Paired nicely with a pint of New Belgium Trippel
What you'll need:
1 cup quinoa, rinsed
2 cups apple juice
1/4 cup walnuts, crushed
1 cup fresh berries
Dash of cinnamon
3 torn mint leaves
How to make it:
Bring the quinoa and apple juice to a boil and then lower the heat to a simmer. Cover and cook for 15 minutes until the quinoa is translucent. Remove from the heat and let the quinoa rest, covered, for 2 minutes before dumping it into a bowl, stirring in nuts, berries, cinnamon, and mint.. Makes 2 servings.
Per serving:
370 calories, 7g protein, 62g carbs, 6g fiber, 12g fat, 15mg sodium.

I started blogging two years ago in an effort to document and share my adventures with my family, friends and the online community on Active.com. Since then, the focus of my blog has evolved from outdoor adventures to showcase my life of training and racing as an endurance athlete.
My new blog home acts as an aggregation of my life on the social web with links/feeds to/from all my content: Twitter updates, event calendar, blog archives, Flickr photos, YouTube videos, race results, sponsors and links to other cool stuff on the web.

It’s been a month since my last post, where I shared my race report from the VT100. In that time I’ve managed to recover properly and maintain my fitness base by training with the ActiveX group on M/W/F and running the canyon trails with James on T/TH. I’ve also incorporated yoga practice at Sorrento Valley Yoga and stayed super busy with work and some fun side projects.
This weekend, I’m heading back up to the Sierra Nevada for my third attempt at the Palisades Traverse. I’ve got a good feeling about this trip so stay tuned for my report next week.
