Fresh Fruit "Risotto"

Today I was reading Men's Health Magazine at the beach and found this super-healthy and tasty quinoa recipe I just had to try. It turned out great, so I wanted to share it with you. Give it a try and let me know how you liked it!

Paired nicely with a pint of New Belgium Trippel

What you'll need:
1 cup quinoa, rinsed
2 cups apple juice
1/4 cup walnuts, crushed
1 cup fresh berries
Dash of cinnamon
3 torn mint leaves

How to make it:
Bring the quinoa and apple juice to a boil and then lower the heat to a simmer. Cover and cook for 15 minutes until the quinoa is translucent. Remove from the heat and let the quinoa rest, covered, for 2 minutes before dumping it into a bowl, stirring in nuts, berries, cinnamon, and mint.. Makes 2 servings.

Per serving:
370 calories, 7g protein, 62g carbs, 6g fiber, 12g fat, 15mg sodium.

  2. Sara, it's a must-try. The leftovers were just as good, cold. I think its the way the quinoa cooks into the apple juice. The flavors are all complimentary. Let me know how it turns out for you!
